Vicki has always been in the kitchen- at 7 years old, her grandparents were buying her her own kitchen tools and helping her make her own cookbook. She first found the Whole30 through a friend's recommendation, and never looked back. Vicki was featured on Whole30's blog in 2016 due to the success she had with the program in managing her cerebral palsy symptoms. Since that time, she's dedicated herself to making the Whole30 community more accessible and inclusive for those who have disabilities and deal with chronic pain, illnesses or autoimmune disorders. When she's not cooking or talking about food, you can find Vicki in her Crossfit gym or singing in her local ensembles with her husband.
"I believe the Whole30 is for EVERYONE- even though I know it can be daunting as someone with limited spoons. Whole30 empowered me to see how I wasn't defined solely by my disability, and I want that same thing for all who deal with health issues. You are not what you're diagnosed with! Give me time, and I promise that you'll be on the pathway to seeing how food can be the first starting block in changing your perception of your health. I'll make sure you've got the tools to tackle the Whole30 with the energy and time that you have- because we're all unique."
